How do I substitute dried herbs for fresh?

A good rule of thumb is to use one third the amount of dried as you would fresh. If your recipe calls for one cup of fresh dill, use 1/3 cup of dried. Basil is one exception. You should use half as much dried as you would fresh.

How long do spices last?

Most whole spices can last three years. Once spices are ground their volatile oils have been released and they are already beginning to dissipate. We recommend not buying a larger amount of an individual spice than you expect to use within a year.

How can I tell if my dried spices and herbs are fresh?

Smell is a good indicator. Rub a small amount between your fingers. If the spice or herb is not fragrant, or has only a faint smell, then it is probably time to replace it. Taste is another good test. If you find you are using a larger amount of a spice or herb than usual in your favorite recipes to get any flavor, replace it.

Where should I store spices and herbs?

Spices and herbs should be stored in airtight containers, away from the exposure to heat, moisture and direct sunlight. These elements hasten the loss of flavor and aroma of spices and herbs. Avoid storing your spices and herbs over the stove, dishwasher, sink, or near a window. Members of the red pepper family (capsicums), such as paprika and chili powder, and other bright colored spices like turmeric, should be refrigerated to help retain color and flavor.
